Green & White Leeks
Green and white leeks are sweet and subtle with a tangy flavor. They are all natural and an excellent source of vitamin C. Use them dry in potato, macaroni, or green salads, or re-hydrated in soups, stews, or casseroles. When cooking with little liquid, let 1 part leeks sit in 5 parts cold water for one hour. For more rapid re-hydration, simmer for 5-10 minutes. 1 pound of air dried leeks equals approximately 6 pounds of fresh chopped leeks.
