Rosemary Leaves
Rosemary is the dried leaves of Rosmarinus officinalis. It is generally grown in Spain, Portugal, France, and Yugoslavia. The slender, pine needle-like, brownish green leaves have a tea-like aroma and a bitter camphoraceous flavor. It is often used to season lamb, pork, chicken, turkey, stuffing, and potatoes; it can also be baked into breads. Rosemary is typically used sparingly, as it has a strong flavor that can be overpowering.
